With the exception of a few prototypes, and international relations from other countries, France never used any tilting trains.
TGVs aren't equipped with anything of the sort, only one train set were modified for tests during about 3 years.

In the 60s/70s, Fance decided to mainly bet on new high speed lines, limiting the interest of tilting technologies.

I meeeeean..... Tilting trains are a big no to me..... Tilting can have bad effects. If the train tilts and falls off the rails, injuries are possible!

Of course, tilting trains are designed to work within certain boundaries. Non-tilting trains have tilted and derailed too.

Well, tell that to Deutsche Bahn (German Railways) and Czech Railways then. ČD class 680 Pendolino EMU can tilt itself, so it can maintain speed of 160 km/h (100 mph) in a bit tighter curves. And AFAIK, the latest generation of DB ICE3 EMUs (mostly dubbed as DB ICE-T) can tilt themselves too in order to be faster in very curvy sections of high speed lines.

I have no idea, what are those commands. Maybe they're only meant for devs, but IDK. :|

How does the driving work with the new trams? Do I have to use the duty selector? Which codes do I have to use?

If you mean Essim tram network, then yup. You have to use duty selector to select a route.
You can find out how to set up duty selector here here.
If you're asking for service codes those are "1xx" (for lines 1 and 2) and "2xx" (for lines 3 and 5).

But be careful with those trams in Essim! In ROZ areas, there's no security system to hold you back and ARI system in Essim tram tunnel only stops you if you SPAD or go too fast through the signal.
