It also seems that a train exiting Ealing in the morning, enters Palace Gardenin the evening, so Ealing depot has one train less than in the morning. Is the reverse train somehow modelled so that the amount of trains in each depots at the beginning and end of service is even?

According to the timetable these amounts at each depot are equal in morning and evening. Some trains do however switch between lines. The default numbering is based on which line the train serves:
201 - 220: Ealing - Barlow
221 - 240: Ealing - Palace Garden during the day, Birkbeck - Hendon in the evening.
241 - 260: Beckton - Hendon
261 - 280: (Beckton) - Acton - Hendon during the day, Birkbeck - Hendon in the evening.

Same for the green line, again default numbering, some trains change between Simpleton and Beckton branch at the start of the evening:
401 - 420: Simpleton - Oxford Cross, shortened to Aldgate between 20:00 and 22:00
421 - 440: Beckton - Aldgate, extended to Oxford Cross between 20:00 and 22:00
441 - 460: Elmford - GWR

I Just looked at Hemdon Market, and spotted S8 stop signs. Does anybody know why ?

It's a bit like the Stanmore branch in London, which was originally part of the Metropolitan line which later got taken over by the Bakerloo line (and even later by the Jubilee line), so it was built to sub-surface standards. But unlike Stanmore in London, Hendon in the City of Thames retained the ability for sub-surface stock to visit this branch in case of engineering works.

The Yellow and Blue services are accurately right.... But you need to know sometimes during certain hours on the Purple Line, they change services.
