Can they be any color? I was thinking the signs would be colored based on their lines and black or something when it's a transfer.

I was thinking of painting the signs in the same colour scheme as the vehicles (only on this line), but I am not sure yet.
Putting the signs in line-colours on all lines is not practical in my opinion; if you change the routes, as a part of the yearly renewed timetable for example, you would have to replace all stationsigns. And what to do with stations where two or more lines pass along the same platform?

Well, you could do it like this (please excuse me screenshotting it off and colouring it a very lazy way):
Colours of the stations/trains/signs representing the line colour is actually not that uncommon on networks where lines always run on their very own section and there is not really any way of changing the lines, see for example Seoul
Here line 5 which is violet. You see, violet trains and station signs. This of course also limits what rolling stock to be used on what line and often drivers will only drive one line their entire life, as it is common practice in Asia.

In Rotterdam we don't have colorcoded station boards. So it doesn't come in the simulator. It's cool though.

Black signs more than 1 line. I've never seen a Metro system were there's a black line. And ones that do use black is usually as number routes.

If Rijndam is based off of Dutch and non-Dutch cities, than it's possible.

Rotterdam has it; blue station signs for the north-south corridor, and red station signs on the east-west corridor;

Haha, a very colourful suggestion
I still prefer blue for all signs, but I am considering doing a separate design for the Airport Shuttleservice.
